This design is from the Book of Kells.  An endless knot to the Celts was one way to express the concept of infinity.  On an archetypal level, knot work designs represent the eternal journey of humans through continuous cycles of birth-death-rebirth.  It is a journey that continues until perfection is achieved.  Death, they believed was but a portal to eternal life.  In the words of the Celtic poet, Amergin:
